Season the chicken with sea salt and ground pepper to marinate.
Steam the cabbage and garlic chives in a steamer and let cool.
Julienne the perilla leaves. Remove the seeds from the bell pepper and julienne into 5cm lengths. Julienne the carrot and onion to the same length.
Cook the marinated chicken in a greased pan, turning and sprinkling with sake until fully cooked. When done, tear the meat.
Mix yogurt, mustard, honey, lemon juice, and sugar evenly to make a sauce.
Place the prepared vegetables and torn chicken on the steamed cabbage, roll up, and tie with the steamed garlic chives. Serve with the yogurt sauce.
